Peach sorbet being carved with a flat spade in a steel pan, beside halved peaches and a bowl of pistachios

Churned at dawn, carved by noon.

Each batch starts with ripe fruit and very little else. We churn slowly, then shape every scoop with a flat spade so the ridges hold.

The menu follows the fruit.
